My favorite type of cookie – my favorite type of cake. This Giant Chocolate Chip Cookie Cake with Chocolate Frosting is the ultimate dessert for cookie lovers.My my raison d’etre if you will. We’re combining cookies, cakes & frosting all in one – and the recipe is so easy. So it’s the perfect birthday cake for cookie lovers, or when you’re looking for a no-stress recipe with a little something extra. The cookie is super soft & buttery. And because its made into cake form, its also ridiculously thick, chewy & filled with so many chocolate chips.It uses real butter for the most flavor, and brown sugar for a deeper caramel taste and extra chewiness. The secret ingredient is using vanilla pudding mix in the batter.What’s even better about making cookies in cake form is that there’s no dough chilling.Finally, I piped chocolate buttercream around the edges of my Giant Cookie Cake. It’s also delicious served warm with ice cream, or maybe a drizzle of chocolate sauce. Or all three.While the cake is cooling, make the buttercream. In a medium sized bowl using a stand or hand-held electric beat the butter until fluffy & no chunks remain. Add in the cocoa and about ½ the icing sugar while continuing to beat the mixture. Slowly add in the cream or milk 1 teaspoon at a time while adding more icing sugar a few spoonfuls at a time until the desired consistency is reached. Use a piping bag to decorate the cookie cake with frosting.
